Healthy Muffin Recipe

Hello Everyone!

So here is my favorite recipe for the week:

  • Beat slightly….1 egg
  • Stir in…………..1 cup milk, 1/4 cup of olive oil

Stir separately and add to wet mixture:

  • 1 cup flaxmeal
  • 1 cup freshly ground whole wheat
  • 1/2 tsp liquid stevia
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt

Stir JUST until flour is moist.  The batter should be lumpy; don’t overmix.  Fill greased muffin cups.  Bake at 350 for aprox. 15 minutes.
