Healthy Muffin Recipe

Hello Everyone!
So here is my favorite recipe for the week:
- Beat slightly….1 egg
- Stir in…………..1 cup milk, 1/4 cup of olive oil
Stir separately and add to wet mixture:
- 1 cup flaxmeal
- 1 cup freshly ground whole wheat
- 1/2 tsp liquid stevia
- 2 1/2 tsp baking powder
- 1/2 tsp salt
Stir JUST until flour is moist. The batter should be lumpy; don’t overmix. Fill greased muffin cups. Bake at 350 for aprox. 15 minutes.
